On to the Grocery....

The farmers market was a bust yesterday- poor selection and rude vendors. In a fit of disappointment, I went home and refused to cook for the rest of the day- my measly score of odd shaped peppers and local grapes didn't offer much culinary inspiration. So today, I am off to the grocery store. I don't know what I hope to find. I would like to make a nice melon soup, chilled of course. I want some lettuce, to make salads, and I want mushrooms to make stuffed mushrooms. Portabellas, stuffed with brown rice and shaved almonds. ... served with mushroom gravy and asparagus, with a fresh spring mix salad.... yum.

Farmers Market Saturday!

Tomorrow I am loading up the kids in the car and heading out to the farmers market- the one on Saturday is more bare bones than the others through the week. I am going to load up on fresh fruit and veggies, and tomorrow I am going to make a really good vegan meal. I don't know what I am going to cook. All I know is that it will be fresh, local and healthy.

I can't wait to see what the market has to offer, and what I make out of it!

Today is opposite day!


Since Hurricane Irene is hitting the New England states instead of Florida, the usual go to spot for hurricanes, and since today was such a gorgeous day that the children and I spent it at the springs, I decided that today was a good day to make a dish that would not usually be eaten on a 90+ * summer day... soup! And not just any soup, but Pantry Soup! Pantry Soup is what you make when you take random things you haven't used in forever out of your pantry and make soup out of it! Simple, and lazy, yet requiring creative skills to make the soup taste edible.  Today, my Pantry Soup is....

 Split Pea Pantry Soup!!!


 Split Pea soup is so good and so easy to make. You basically crush up some garlic, chop some onions, and cut up some carrots. Then you cook that all together with some olive oil over medium heat, till it gets a little tender. Throw in whatever spices suit your taste, add six cups of water and 1 lb of sorted, rinsed split green peas, bring to a boil, then cover and cook 45 minutes, at a simmer. It basically cooks itself, while you do nothing. When the peas are tender, you can take out half of the soup, and blend it, then add it back in the pot ( to thicken the soup) or you can leave it as it. I left it as is, if only because my children were sleeping, and the blender is just so loud. Add some salt and pepper and serve it up... filling, good for you, and nearly fat free! Can't beat it......

It's been a while...

But tonight I made a vegan meal. Tomato and Basil sauce with garden veggie pasta, and spinach. The kid loves spinach. I had almost given up on my veganism. Almost gone the way of "it's too expensive" blah blah blah. Yet when I don't eat meat or dairy, I feel fantastic. So for me, the next three days will be spent fasting, water and juice only, as I attempt to cleanse my body. Not only am I revitalizing my diet, but I am also working on my physical and spiritual side. Meditation and yoga in the mornings, and vegan food throughout the day will make me healthy and happy. So much has happened lately that my little food blog fell under my radar. Yet, this is a part of who I am. My endless struggle to eat vegan, and my epic failures at doing so. Commitment is all that is needed. Inner peace of mind and a healthy body, to help me on the quest that I am to soon start.

So stay tuned. Starting tomorrow, I am hitting the pantry and digging through the 800 cookbooks I have, and I am making something amazing. I have faith in myself. I have the will to do this. Veganism is a key part of me, and I will embrace it with open arms, not a dread of going in the kitchen.

Lazy Vegan Dinner

Tofurky roast thrown in oven. Mashed potatoes... green beans. Kid and I are fed. Husband is working. Bebe sleeps. Tomorrow is Father's Day, so a happy one to all of you out there. MY spirit has been down lately... need to jump in the kitchen and get my inspiration on.
