Lazy Vegan Dinner

Tofurky roast thrown in oven. Mashed potatoes... green beans. Kid and I are fed. Husband is working. Bebe sleeps. Tomorrow is Father's Day, so a happy one to all of you out there. MY spirit has been down lately... need to jump in the kitchen and get my inspiration on.

What A Bad Vegan..

First, my husband made me a spectacular vegan pizza with asparagus and peppers, but instead of taking a picture, I ate the entire thing....

Also, spent the last few days in the Smoky Mountains with family that don't really know how to feed a vegan. At first I attempted to live off of watermelon and cantaloupe... which is great for my weight loss, but not so great for my attitude. To avoid a divorce (so soon after our anniversary) due to my incredible crankiness due to lack of nutrition,  I broke down and ate some mac and cheese for dinner one night. I hate this. I hate this because the dairy industry is the most cruel and horrific industry of all. For the last three days I have eaten nothing but grits, green beans, and melon. Oh, and the mac and cheese. So, eight lashes across the back with my whip, and on to the next thing.

Tonight my husband saved me- he made me the best veggie burger ever. All it was- a vegan Boca burger on bread with veganise, ketchup and mustard. It was made with love, and devotion. That's all that matters...

Tomorrow! Vegan blueberry pancakes, and then something for dinner that involves bok choy. Also, school tomorrow, for studying, with large hopes that I will be full time by the end of the year.

My few blog readers, this will improve! Pics, recipes, and recommendations will fill this blog soon, as will my wit. It has been a busy few weeks, what with the family reunion, the birth of my new nephew, and my scramble to have a real college degree by the age of 30. Stick with me, and I promise to deliver!

I'm Vegan, but I Don't Really Eat...

It's that time of the month when the budget is running so low that the food we buy has to feed everyone, not just the picky vegan. So for the last three days or so I have lived off of watermelon, and a ginger salad from Liquid Ginger. This is not good for me, as the mother eyes my protruding hip bones and sighs....

Being vegan can be a challenge when you are impoverished. Even more so when you have an entire family to feed. More often than not, the food that is brought home at the end of the month is something like pizza (cheese and meat) or hamburgers off the dollar menu. This is not food that I want to put in my body, so to fend off the hunger in my belly I think about the poor animals that suffered... and that takes the taste for any sort of animal product right out of my mouth.

Planning on hitting the grocery store this weekend, and at the advice of my very best enemy, I am going to go with a planned out list of meals, so that I don't impulse buy and wreck my budget. I am no good at planning or budgeting, but seeing as I have a family to feed, and I am the one with the dietary restrictions, it should fall to me to make sure we have what is needed in the fridge. Fresh fruit is high on my list, as both the Kid and I enjoy it.

So, the amazing mess of my attempts at cooking will start again on Saturday. Eventually I will learn something, and make a meal that my family can be proud of.
